A recipe from a local Chocolatier
There’s nothing more alluring on a cold winter’s day than a savory cup of homemade hot chocolate. One of the season’s greatest treasures, this traditional wintertime refreshment falls into two categories: hot cocoa, made from cocoa powder, sugar and water; and hot chocolate, melted chocolate mixed with milk and cream. Chocolatiers Susan and Kaz Moini, owners of Pegasus Gourmet Chocolates in Bend, prefer the European approach––slow tempered chocolate mixed with milk and cream.
The Moinis have been handcrafting artisanal chocolates for 40 years at Pegasus using traditional European recipes. They make a wide variety of chocolate confections from fudge and truffles to caramel and peanut brittle. “We use the highest-quality chocolate and we make our own blend combined from three different kinds of chocolate,” says Susan. The result is a hot chocolate that is potently luxurious. Patrons can choose between slow-tempered dark, milk or white chocolate (or create a custom blend of the three), to which Susan adds steamed milk and cream. It’s a tried-and-true recipe that’s pleased palate after palate. “Everyone who leaves my shop leaves with a smile. I love that.”

Classic Homemade Hot Chocolate
4 cups whole milk
8 ounces chocolate, coarsely chopped
3 teaspoons powdered sugar
1 teaspoon vanilla extract
1/8 teaspoon salt
Place milk in a small pot on low heat and bring to a low simmer, whisking occasionally. Create a double boiler by setting a stainless steel or glass bowl over a saucepan filled with simmering water. Add the chocolate to the bowl and heat until melted. Add the vanilla, powdered sugar, salt and melted chocolate to the milk and whisk vigorously until combined. Top with cream or marshmallows and serve immediately.
